From a press release: Bidwell is now open in Washington DC’s Union Market, the space’s first full-service restaurant now taking its place amongst neighboring artisanal vendors. “Responsibly Sourced” is the motto and mantra of this seasonal, Southern-influenced American restaurant.
Named for 19th century US General and agriculturist John Bidwell, much of the produce for the restaurant, including his namesake melon, will be grown in its Aeroponic garden atop Union Market itself, beginning in March 2014.
Signature dishes incorporating these home-grown ingredients will include:
Crisp Pork Belly & Arugula
Apples, Shaved Fennel, Sweet Onion
Housemade Burrata
Roasted Beets, Hazelnuts
“Gin & Tonic” Wild Salmon
Caramelized Cauliflower, Lime Emulsion
Braised Short Ribs
Mashed Potatoes, Brussels Sprouts, Pan Jus
Bidwell just commenced its weekend Brunch for Saturdays and Sundays, and introduced its Lunch service the week of Wednesday, January 22nd. In Spring 2014 guests will enjoy outdoor seating.
