I for one can never turn down cheesecake, so today we’re sharing Sonoma Restaurant and Wine Bar’s Sonoma’s Goat Cheese Cheesecake recipe with you. Make it on Valentine’s Day or really any day you wish to enjoy the dessert.

Sonoma’s Goat Cheese Cheesecake
Graham Cracker Crust
2 cups graham cracker crumbs
3/4 cup melted butter
15 oz cream cheese
11 oz goat cheese
2 cups sugar
6 whole eggs
6 egg yolks
2 tbsp corn starch
Preheat oven to 350°F. In a bowl, mix graham cracker crumbs and melted butter and press mixture in an even layer on the bottom of the springform pan. Parbake the crust for 10 minutes until it is set and remove from oven.
Cream together the cheeses and sugar in a mixer, making sure to scrape the sides. Slowly add eggs one at a time making sure to fully incorporate before adding another. When the mixture is homogenous, add the cornstarch and continue to mix for another minute.
Pour the cake mixture over the already parbaked crust. Put the whole cake into a pan that has high sides. Add approximately 3 cups water in the pan surrounding the spring form pan. Bake for 1 hour 15 minutes or until top is just golden brown. Allow the cheesecake to cool for at least an hour before removing from the springform pan.
