No saturated fat (or at least it’s VERY low). No oils. No crap. This is the most delicious and healthy homemade salad dressing I’ve ever had. If you’re like me and spend hours looking at the back of dressing bottles in grocery stores, you know exactly how hard it is to find any healthy salad dressing options.

After learning I have high cholesterol, I was referred to Dr. Furhman’s teachings in his book Eat To Live. To say the book is “Mind-Blowingly Life Changing” would barely begin to describe it. If you haven’t read it, DO! Your life could quite literally depend on it. And the best news is that the food you get to eat is so shockingly fabulous that you won’t regret it for a second. My parents have been living by Dr. Furhman’s teachings for years and I’d actually had this salad dressing at their house several times before I finally asked how to make it. So. Easy. Drop everything in the blender (I’m spoiled with a Vitamix, but any decent blender will do). It’s creamy, full of flavor, and totally guilt free. Makes 4-6 servings.

Cashew Dressing

1 cup water
¾ cup raw cashews
4 tbsp balsalmic vinegar
2 tbsp no-salt seasoning
2 tbsp dijon mustard
4-6 dates (with pits removed)
1-2 garlic cloves, minced

Blend all ingredients in a blender until creamy. Done!
