She says, “Because Barr Hill Gin is so simple yet elegant with the only botanical being juniper alongside raw honey, the simplicity of this drink is bright, fresh and brilliant.”
She notes that it’s important to make the raw honey syrup before making the drink. This is essential for proper dilution and also equalizes the texture and viscosity of ingredients, allowing for better integration of flavor. Make this at home for your next party and you’ll be…you guessed it.
Barr Hill Bee’s Knees
2 oz Barr Hill Gin
¾ oz fresh lemon juice
¾ oz raw honey syrup (see notes)
Lemon peel
Note: make a syrup from the raw honey and hot water in a 2:1 ratio (2 parts honey, 1 part water).
Shake all ingredients in a shaker tin with ice. Strain into a chilled coupe or cocktail glass. Garnish with a twist of lemon peel. Hint: Peel your lemon twists before juicing your lemons in order to save on citrus waste!
