This is not a class for the squeamish, I thought as I stared at the disembodied head looking back at me at BLT Steak’s Whole Hog Cooking Class.  Then again, I know where my food comes from. And you must too, if you want to get your hands dirty and do some real cooking.

Part of a series of BLT Steak’s very popular cooking classes, this interactive experience saw volunteers help Chef Victor Albisu break down a 35-pound Duroc pig.

Albisu combines his South American background with European training to show you how to make a variety of creative, tasty dishes at home.

Learn which cuts of meat have the most flavor and why filet mignon is not all it’s cracked up to be.  Steal Albisu’s tips and tricks while using ingredients and products found in your own ‘hood.

Want to try your hand at head cheese? Learn the traditional French way with a pig’s head and a cow’s foot from your local butcher.

As your brain swells with culinary knowledge, so will your belly with amuse-bouche such as ham and oyster (pictured left).

After class, feast on four extravagant courses like whole roasted suckling pig with ramps; asparagus salad with shaved Serrano ham and Marcona almonds (pictured below); chorizo-stuffed pork loin roulade; and bacon chocolate chip cookies.
